Entry Qualifications
Delegates should have passed the Basic Food Hygiene Certificate prior to commencement of the
intermediate course.
We like to carry out a kitchen inspection during the course as a practical exercise, it is not
meant to be a destructive experience. We will also endeavour to carry out a microbiological test to
add some interest.
This course can include the CIEH HACCP's certificate for successful candidates. There is a need
for distance learning time to prepare 2 projects for this part of the course and an additional
days study.

- Bacteriology;
- Bacterial Food Poisoning and Food Borne Disease;
- Food Contamination and it's Prevention;
- Non bacterial Food Poisoning;
- Assured Safe Catering Systems and Controls;
- Food Preservation, Storage and Temperature Control;
- Personal Food Hygiene;
- Design and Construction of Premises;
- Pest Control; Cleaning and Disinfecting;
- Training Food Handlers and Other Employees at Food Premises;
- Supervision, Monitoring and Control of Food Hygiene Standards;
- Mock Examination.
The course has some video presentation, practical exercises and syndicate
work.
